It's a snowy morning here. Leah's school is on a 2 hour delay, my work is closed today. Leah's not overly happy about her school not being cancelled but the community college she is going to next semester isn't closed either so that's just life. Jordan has asked for a day off but he isn't going to get one either (homeschool doesn't close for snow). I've got a weather headache so I guess we are on "delay" too.
Bulk cooking: I'm starting to plan more that direction. I was reading up on it a bit and it really makes a lot of sense. If you are making spaghetti sauce why not make 2 or 3 times more while you have the ingredients out? We will probably use baggies (freezing things flat) to do a lot of the freezing for now, they are fairly economical and they thaw fairly quickly. So far we are planning on doing: spaghetti sauce; marinara; broths (chicken and turkey); pizza crusts; soups and chilli's. I'm sure this idea will expand as we go along. A couple more "bulk" cooking ideas that we have been implementing: We buy garlic in bulk. We roast a couple of batches and then save the rest to use fresh. The last time I bought garlic was about 2 1/2 or 3 months ago (we use a lot of garlic in cooking). By the way, we've found that fresh garlic lasts much longer OUT of the refrigerator, I'm not really sure why we got the idea to refrigerate it in the first place. We have been buying lemons and limes in bulk also. I squeeze the whole batch at once and just refrigerate what we don't use immediately or make a batch of fresh lemonade:) A funny thing...several months ago Leah took some fresh lemonade to school in her water bottle. Several of her friends asked, "What's that?" They thought maybe her water bottle had mold or something in it.
I'll run for now, Speaker Pelosi is commenting on healthcare. I want to see what she and the other nuts on Capitol Hill are doing to our healthcare system now.
