The saga of Regan the Coyote continues....and continues....and continues at our house. We find out a little more about him each day. I had Jordan write down 15 sentences yesterday and Ms. Michelle helped him put them into paragraphs today. I am thrilled that so many of you enjoyed his picture.
Leah has caught a little bit of my bug but seems to be mending quickly, hopefully without the obligatory trip to worship The Toilet Bowl King. Leah takes after Mark's side of the family and is rarely sick but heals quickly when she catches some little bug. I have come to believe that those of us who suffer from allergies, myself and Jordan included, tend to suffer from these little bugs more often because our immune systems are always busy fighting some other type of attack.
We got our new Cooking Light yesterday and it had a recipe for butterscotch pudding in it. I'm not usually a huge fan of butterscotch but I liked this. Mark cut the sugar a bit more than the recipe called for but we have decided that maybe it could be do with a little more with a reduction in the sugar and salt levels. We just don't like things as sweet as we used to. (My only real exception to this rule would be that I love my Hershey Bar with Almonds.) We tried one of the Talapia fish recipes and wound up liking that too. It is amazing to me how different we eat now. We never went on a "health food kick" we have just added things in one at a time as we found things we liked and slowly but surely we are eating better. There are times now that I just crave vegetables, never thought I would be saying that.
We have been going to the Y for several months now but I think I am going to do the fitness evaluation and see about maybe doing some basic weight training and cardio. Mark did it a couple of weeks ago and he is really enjoying the workouts. I don't really need to loose a lot of weight but I would like to be a lot fitter and healthier. I guess you could call this my New Year's Resolution.
