Bye's Taco Seasoning

We started making our own taco seasoning this year. A lot of the ones on the market are not gluten free and we can't buy the Williams brand that we had been buying in Kansas City. Mark started with a recipe we found on www.foodrenegade.com and of course has made his own adaptations to make it more like what our family likes.

Bye's Taco Seasoning
1/4 c plus 1 Tbsp. chili powder (We have some bulk Tone's which has things other than chili powder in it)
1 1/4 tsp. garlic powder
1 1/4 tsp. onion powder
1 1/4 tsp. dried oregano
2 1/2 tsp. paprika
2 Tbsp. plus 1 1/2 tsp. ground cumin
1 Tbsp. salt
1 Tbsp. corn masa or corn meal
1 Tbsp. cocoa
3 Tbsp. Medium chili powder (chili only, we've been finding it in the ethnic section at Wal-Mart)
1 tsp. chipotle chili powder

You use about 2 Tbsp. per pound of ground beef and 3/4 cup water. It works like any other taco seasoning. Cook your ground beef, add the spice and the water, bring it to a boil and then reduce heat to low and simmer for about 5 minutes. We store our extra in one of those little round Glad containers so it is easy to store and to measure out of.
