Saving Money-Garlic 101

Buying garlic in bulk is one of the ways we save money and it saves me trips to the store. Depending on the size of the package I save back 3-5 heads of garlic to use fresh. We roast the rest in the oven to use in soups, pasta dishes, and maybe garlic toast.
You need enough aluminum foil to cover the garlic head completely. It takes a little practice but after a while you can kind of eye how much you need.
Place the foil into the cup of a muffin tin.

Cut off the top of the garlic head so that it looks like the picture below. Even the cloves at the edge of the garlic head should be somewhat exposed.

Place the head of garlic onto the foil in the muffin tin.
Drizzle about a tablespoon of extra-virgin olive oil (this one is our favorite) onto each head.

Close the foil up around the clove.
Bake in the oven at 350 degrees
for one hour.
When it's done baking (and you can touch the foil without burning yourself) open up the foil and let it cool probably 10 more minutes.
Squeeze out the cloves from the bottom.


Place them in one of those Ziploc or Glad containers. We usually keep one in the refrigerator and one in the freezer. We have kept the ones in the refrigerator for a month and a half or so and they haven't gone bad. We don't know for sure how long they would last because we always use them up before they go bad.
